    • 500 g broccoli
    • 30 g butter
    • 2 medium onions
    • 3 cups broth
    • 1/2 cup sour cream or cream

Rinse broccoli under running water. If using frozen vegetables, thaw them completely at room temperature beforehand. Pat dry on a kitchen towel. Cut the stem from the head. Break the broccoli into florets.

Heat butter in a pan. Arrange the onions and cabbage stems. Sauté until onion is translucent, stirring occasionally, about 5 minutes.

Heat broth in a deep saucepan. For the bisque, you can use whatever you have: meat, chicken, vegetables. The only condition is that it must be natural. Gently dip the broccoli inflorescences into the boiling broth. Wait for the moment when the liquid starts to boil again.

Reduce heat to medium and cover. But don't close it, the soup may "run away". Cook the broccoli for 15 minutes. Do not exceed this time. The inflorescence is very fragile. During prolonged heat treatment, they lose their vitamins rapidly.

Add the sauteed onions and stems to the skillet where the broccoli inflorescences were cooked. Cook everything together for 5-7 minutes. Season the soup. Add spices. Pour in the flour paste. Stir and keep away from heat.

After 10-15 minutes, when the soup has cooled slightly, mash with a blender or pass through a fine sieve to break up the clumps.

Pour into pan again and heat. If the soup is very thick, thin it with broth or boiling water to the desired consistency.

Step 10

Pour into a bowl. Serve with sour cream, cream. Sprinkle with green onions.
